Cashew Nut Fried Rice

¼ bowl – Green peas
¼ bowl – Mushroom, diced
¼ bowl – Red pepper (Capsicum)
½ bowl – Cashew nut, roasted till fragrant
4 bowls – Brown rice
2 tablespoon – Coconut oil

¼  bowl – stock or water
¼  teaspoon – sea salt
¼  teaspoon – brown sugar
1 teaspoon – soy sauce
a dash of pepper
Note:  Put all the spices in a bowl and mixed them well.


  1. Heat frying pan and add in 1 tablespoon coconut oil. Fry ingredient A till fragrant, dish up and put it aside for later use.
  2. Clean the frying pan and put in the remaining coconut oil and fry the brown rice. Gradually add in the mixed spices and stir fry till they are fragrant.
  3. Add ingredient A and fry it well. Add the cashew nut, mix well and ready to serve.
